These Spicy Taco Zucchini Boats are every low-carb eater’s dream! Packed full of taste and flavor, everyone will love every single bite! Get ready to have a brand new favorite easy to make dinner! 

Spicy Taco Zucchini Boats

I love to try new foods…and I’m actually pretty adventurous. While I tend to stay away from things that are overly spicy, this zucchini recipe is so delicious and good. There’s just a small bit of heat to take your taste buds on a while ride without making you rush to the water fountain for a drink.

Can you make this recipe not spicy?

Of course! If you like the idea of the recipe but aren’t crazy about the spice, just omit that ingredient from the list below and keep going! 

Ingredients to make these Spicy Taco Zucchini Boats:

  • 5 Large Zucchinis 
  • 1 lb. of Turkey Burger
  • 3/4 of a can of Black Beans 
  • 1/2 a can of Corn 
  • 1 Red Onion 
  • add 1 Red Pepper 
  • 1 – 2 Jalapeños  
  • add 1/2 a teaspoon of Pepper 
  • 1 teaspoon of Onion Powder 
  • add 1 teaspoon of Garlic Powder 
  • 1 cup of Shredded Mozzarella Cheese 
  • Salsa for Dipping ( Optional )

How to make this simple zucchini recipe:

Start by dicing your onion, red pepper, and jalapenos.

Next cut the end off of each zucchini and slice 1/4 of the front off, long ways.

Scoop out the insides with a spoon.

Brown your turkey burger, and add in diced vegetables, black beans, corn, pepper, garlic, and onion powder.

Stir on medium heat until warm.

Spoon mixture into each zucchini.

Place “boats” into a baking dish and cover with foil.

Bake at 400 degrees for 25 minutes.

Remove foil, and add shredded cheese to each boat.

Bake an additional 5 minutes or until cheese is melted.

Serve and enjoy!
