Pizza Muffins – Easy Kids Lunch Box Idea!

If you’re anything like me, trying to figure out what to pack for the kid’s lunches every single day is draining. Downright tiring. This is why I’m always searching for something simple and easy to do. Luckily, these Pizza Muffins save me time and time again. They take minimal effort and taste great. So good that the kids actually ask for them all the time! 

This easy lunch idea makes it a total breeze to pack lunch and get the kids out the door. Although, we make this at home all the time too because it’s just that simple and good!

Ingredients needed for Easy Pizza Muffins 

  • 1 and 1/4 cups of plain flour 
  • 2 teaspoons of baking powder
  • 1/4 cup of rapeseed oil 
  • 2 eggs
  • 1/2 cup of milk 
  • 3 tablespoons of tomato puree
  • 1/2 cup of cherry tomatoes 
  • 1/2 cup of cooked chicken
  • 1/4 cup of grated mozzarella + extra for topping 
  • 1 teaspoon of dried basil
  • Salt and pepper to taste

How to Make Pizza Muffins 

Preheat the oven to 350°F (180°C).

Line a muffin tray with paper muffin cases.

Cut the cherry tomatoes into quarters and cut the cooked chicken in chunks. Set Aside.

In a mixing bowl, add the flour and baking powder. Mix

Add the rapeseed oil, eggs, milk, and tomato puree. Whisk until a smooth batter.

Add the cherry tomatoes, cooked chicken, grated mozzarella, dried basil, salt, and pepper. Mix, but do not overmix.

Pour the mixture into the muffin cases.

Top with grated mozzarella.

Bake in the preheated oven for 25 min until the muffins are golden on top and a knife comes out clean.

Simple Variations to this Easy Kid’s Lunch

For vegetarian muffins, omit the chicken.

Store in an airtight container for 3-4 days. To freeze just place into freezer bags.
