Ingredients to make this Peppermint Icebox Cake

How to make this Peppermint Icebox Cake

Get started by either rolling your vanilla wafers with a rolling pin or placing them in a food processor. Either way is simple and easy to do. 

Once you have that done, you’re going to mix with melted butter, until wet and press mixture into the bottom of a 9×13 inch pan to form crust. Press it down well so that it sticks and stays to the bottom of the pan.

Next, whip your cream with a hand mixer until peaks form and it becomes stiff.

Once you’ve done that, you can then add in marshmallows, pecans, and peppermint. After all that is added, take and fold into whipping cream until well blended. 

Pour mixture into a pan and smooth it all out. 

Add any leftover wafer crumbs, pecans, and peppermint to the top if you wish. (It’s totally up to you!)

Once done take and put it in your freezer for at least 3 hours. 

Serve and enjoy!

  • 1 and 1/2 pints of Whipping Cream
  • 1/2 of a pound of Small Marshmallows
  • 3/4 of a cup of Pecans
  • 8 sticks of Peppermint Candy
