Gingerbread Man Cupcakes

Gingerbread Man Cupcakes

Ingredients needed to make these Gingerbread Man Cupcakes 

Just gather up the list of simple ingredients below to make these tasty holiday cupcakes! 

  • 1 box of chocolate cake mix
  • 3 large eggs
  • ½ C canola oil
  • 1 ¼ C water
  • ¼ C molasses
  • 2 tsp ground ginger
  • 1 ½ tsp ground cinnamon
  • ½ tsp ground cloves

Cinnamon Frosting

  • 1 C unsalted sweet cream butter
  • 3 C powdered sugar
  • 1 tbsp ground cinnamon
  • 3-5 tbsp heavy whipping cream
  • 2 tsp pure vanilla extract
  • 1 large piping bag with a star tip
  • 2 C of gingerbread sprinkles
  • 3 – 6 pack of the gingerbread flavored peep marshmallows

Gingerbread sprinkles

  • 1 package of Wiltons sprinkle mix, Gold
  • 1 package of Gingerbread Man sprinkles
  • 3 – 4 oz Sprinkle Pop Pumpkin Carriage Sprinkle Mix

How to Make Gingerbread Man Cupcakes

Preheat the oven to 350 degrees and line a cupcake pan with liners.

Using a large mixing bowl, beat together until combined all of the cupcake ingredients.

Scoop the batter into the liners, filling about ¾ way full.

Bake in the oven for about 20-21 minutes or until a toothpick comes out clean.

Allow cooling completely.

Frosting directions

Using a standing mixer, beat together the butter, powdered sugar, vanilla, cinnamon, and heavy whipping cream until combined, smooth and stiff.

Scoop the frosting into the piping bag.

Using the frosting, pipe two rings of frosting around the edge.

Dip the cupcake into the sprinkles and make sure it’s completely coated.

Pipe a dollop of frosting into the middle of the cupcake.

Carefully place a gingerbread marshmallow peep into the frosting. Add sprinkles.

How do you know when cupcakes are done baking?

The easiest way to be certain that your cupcakes are done baking completely is to use a toothpick or a clean butter knife and stick it down into the middle of the cooked cupcake. If it comes out clean, you’ll know that the cupcakes are done baking and ready to be removed from the oven.

If there is still batter showing on it, then you need to let the cupcakes bake for a few more minutes of time.
